Getting through the work week can be tough. When I found it hard to stay alert, my go-to solution used to be coffee and energy drinks. Initially, a cup of coffee kickstarted my day, but soon I found myself downing three sugary coffees with creamy swirls, resulting in midday slumps, stomach issues, and irritability. Now, I've transitioned to starting my mornings with matcha tea, my enchanting elixir that keeps my energy levels steady all day long (Also, my skin is glowing!).

So what is Matcha? Matcha is a premium green tea that is finely ground into powder form. Originating from the leaves of the Camellia sinensis plant, matcha undergoes a unique cultivation and processing method that sets it apart from other types of tea.

Matcha, known as the green superhero in the tea realm, begins its adventure in shaded areas where tea leaves eagerly absorb chlorophyll. Only the freshest leaves qualify to become matcha, elevating it to the status of the Beyoncé of teas. Following a luxurious steam treatment, these leaves are meticulously ground by cool stone grinders, transforming matcha into the rebellious rockstar of the tea world.

Shade Grown: Matcha production involves using shade-grown tea leaves, where the tea bushes are shielded from sunlight through a meticulous process. This method enhances chlorophyll production in the plants, resulting in vibrant green leaves. Reduced sunlight affects photosynthesis, leading to changes in caffeine, flavanols, sugars, antioxidants, and theanine levels. By regulating sun exposure, tea producers can significantly influence the chemical composition and taste of the final tea leaves.

Seasonal Harvesting: Only the youngest spring buds and three leaves from the shaded tea plants are hand-picked for matcha production. This limited production window contributes to matcha's higher cost compared to other teas.

Steamed Processing: Similar to many Japanese teas, the tea leaves destined for matcha undergo steaming after plucking. This quick steaming process, conducted shortly after harvest, stops oxidation and enhances the vibrant green color of the shade-grown leaves. The steaming also imparts a distinct flavor profile often described as sweet and vegetal.

Stone Ground: Unlike traditional green tea leaves which are rolled and shaped, matcha leaves are dried flat to become tencha, the base for matcha production. After removing stems and veins, the remaining leaf material is ground into a fine green tea powder using slow-turning stone mills, resulting in a smooth texture.

If you’re like me I am averaging 14 hours a day, 4 hours of driving, and 10 hours of computer work. That is a lot of butt work, I have worked hard for these saddle bags. So someone came up with the idea of placing a treadmill under your desk so you can work and exercise at the same time. I love the idea. Scrolling while your strolling. I don’t think you can find anyone who loves walking more than I do. I aspire to be the female Forest Gump...Walking from one starbucks to the next.
